Apple Brine

1      Gal      Apple Cider

½     Gall     Water

1.5   cup      Kosher salt only

2      lb        Brown Sugar

1      cup      Gran. Garlic

½     lb        sliced ginger

12    ea       bay leaves

10   sprig     rosemary

10   sprig     thyme

1     cup       smashed fresh garlic

1     gall      Ice filled with cold water

Procedure:

Slice and smash your ginger and garlic 

slice your oranges in half

Measure your salt, sugar and spices

Put everything in a pot except ice water.

​

Bring to a boil and turn down to a simmer for 15 min. Cover and steep for 1 hour. Uncover and rest 2 or 4 hours.

​

Fill up a gallon pitcher with ice and fill it with cold water to make a even gallon. Pour this into the brine. Don't put the turkey in it until it is 40º to 45º or below. You may need to put it in the cooler over night. 

Ingredients 

These are over 9 years old and the quality is not the best but it will give you a good general understanding of the steps required to roast a moist delicious turkey for any occasion.
