We started participating in
Jazz Fest in 1997. There so many great and traditional food items at the fest already, so we had to come up with something unique. Chef John Caluda had just come up with Crawfish Strudel for a cooking show with Alex Gifford. He presented it to the Jazz Fest commitee and they loved it. It has become a staple at the fest ever since. We also serve white chocolate bread pudding, another popular item for the fest and for the holidays.
